Cashew nuts are a good alternative to peanuts and pine nuts. Lightly roasted cashews can be used instead of pine nuts as a cheaper substitute for pesto.

After harvesting the fruit, the carpel is removed to proceed with manual shelling with the aim of selecting only the best nuts.

Drying begins immediately after the nut is harvested and shelled and essentially consists of removing the water it contains.

This process is carried out in large drying vessels and at room temperature along with fans to optimize the process.
